Apong is brewed in Apatani households from rice and a starter culture, served cloudy and cool, and offered to anyone who arrives. Declining it turns out to be considerably harder than drinking it.
The valley is on UNESCO's tentative list for a wet-rice system that raises fish in the same flooded terraces as the crop, without machinery or draught animals. The music festival in September is the one busy week of the year.
