Cardamom grows in the shade of the coffee, which is why a Coorg estate looks like forest rather than farmland. The pods ripen unevenly and are picked by hand over several passes across the same ground.

What happens after the picking is the part outsiders never see — the drying floors, the wood-fired curing, and the grading that decides what the season was actually worth. The harvest overlaps the tail of the monsoon and the beginning of the coffee.
