Taking a whole property changes the arithmetic of an offsite. There are no other guests in the dining room, no fixed mealtimes to work around, and no reason not to move a session outdoors when the afternoon turns out better than the agenda did.
It tends to work best with a rough shape rather than a full schedule — the conversations that justify the trip almost always happen in the gaps between the sessions rather than inside them.
